Method

  1. Mix the starter & water – In a large bowl, whisk starter into water. In a separate bowl, mix flour and salt. Combine both with a wooden spoon until a dough forms.
  2. Rest – Let the dough sit for 15 minutes to relax gluten.
  3. First knead – Knead with floured hands for 5 minutes. Rest for another 15 minutes.
  4. Second knead – Knead for 10 minutes until smooth. Place into a lightly oiled bowl, brush with oil, and rise for 6–8 hours.
  5. Shape – Turn onto a floured surface, divide into 750g portions, and shape into loaves. Place in oiled loaf tins, brush with oil, and proof for 2 hours.
  6. Preheat – Heat oven to 220°C one hour before baking.
  7. Bake – Dust with flour, slash tops, and bake for 30–35 minutes. Mist the oven with water for a crisp crust.
  8. Cool – Turn out onto a rack and cool completely before slicing.
